Gluten is protein found in Wheat, Barley,rye cereals. It helps food to take their structure and shape.The word GLUTEN usually refres to the ealstic network of wheat grain's protein GLIADIN and GLUTENIN, That forms reddily with addition of water.

1. Wheat (Common wheat, Durum wheat, spelt, khorasan, emmer and einkorm).

2. Barley.

3. Rye.

4. Some species of oat.
